Is there a comprehensive list of what the function getInterval() will return?

For example, there have been times when it would return 3 or 3M or 3Min for the 3 Minute interval chart. Also, aside from the intraday, tick, volume, daily, weekly and monthly, what other chart intervals are available?

getInterval() will return whatever [valid] interval the chart is running. As to why it will at times return 3M or 3MIN see the reply to a similar question you asked in this thread.
Aside from the intervals you listed other valid intervals are S for Seconds-bars and P for Price-Change-bars. Starting with eSignal 8.1 (currently in beta) there is also R for Range-bars.

What would be the best way to define a 3-day interval? for stocks and futures respectively?

and for that matter a 2-week interval?

To my knowledge multi-day/week/month intervals are not currently available in eSignal
