When eSignal first starts, all the EFS studies say this in their 'tab window'.

e.g. OBV, Loading Data...

The only way to get rid of it is to 'edit studies' then hit OK. It changes to the proper name.

Is there another quicker way (quick as in: I have 20+ windows to edit)? Is this a to-be-fixed item?

This is a known issue, and has been recorded in our Bug Database. I don't have an estimate at this point for when this will be fixed, but this is likely a quick fix as it appears to be a display issue.
