pages vs layouts

thanks for the answeres the other day regarding screen savers. in the past i've always used layouts, but since installing 7.9 on a new machine, it shows esignal as pages. what is the difference? if i go and save a page does it still save all the market depths, charts etc in the page like it does when i hit save layout?
