There is an example spreadsheet, under Start --> Programs --> eSignal. Below is a screenshot of what the example looks like. Also contained in that spreadsheet are the qualifiers and their descriptions.

How can I write in a cell reference instead of the stock symbol?

Use the "DDE MatrixFill" command from the SigTools Toolbar. There is documentation on SigTools available by clicking the question mark.
