If you are referring to the Tick Replay tool then the maximum number of days available for tick data at any one point in time is 10 days. As days go by you can then download the new data and merge it with the old one using a text editor.
If instead you are referring to the Bar Replay tool then eSignal provides up to a maximum of 120 days of intraday data and 10+ years of daily data [varies by instrument]. For more detailed information on how much historical data is available in eSignal see this article in the eSignal KnowledgeBase

How do i download a bar replay file? eg i would like to download 2 years of AUDUSD spot forex data. How do i do this, as the Tick Downloader only downloads Ticks!

The Bar Replay tool does not require downloading a file but is used directly on the data that you have in the chart. For intructions on how to use the tool see this article in the eSignal KnowledgeBase.
To load a specific amount of data in the chart you need to set that in the Time Template. For information and instructions on how to use Time Templates see this article in the eSignal KnowledgeBase.
