IB / TWS Stop Order trigger methods :Which one is best ??

There seams to be only two best solutions for stop orders trigger, thats is either "LAST" or "DEFAULT".

I dont understand why "LAST" is not the priority default.

So why, please explain...

What methods do You advise, in a say..FAST or SLOW market.

Does any method mean a better chance of a good fill.

I am really after practical advice on which method to choose, so what are the issues to consider on methods.
