does anyone know of a symbol that charts the value of the US dollar versus the canadian dollar? Does such a thing exist?

It sounds like you're looking for the cross rate between the US Dollar and the Canadian Dollar. The symbol for this comparison is CAD A0-FX and is traded on the FOREX market.
